Stone crab claws (tourteau)
The Stone crab, also called Rock crab or Tourteau, is a species that mainly inhabits the waters stretching from the east coast of North America, from Newfoundland to Florida. Delicate and sweet, its flavor is comparable to snow crab, but its texture is finer and less fibrous. Like other crabs, it is recommended for dressing seafood platters to perfection.
